INGREDIENTS:
-8 oz. cream cheese, softened
-1 small onion, finely chopped
-15 to 20 large mushrooms
-6 strips of bacon
-8 mushroom stems
-garlic, chopped
-crushed cheese crackers
-shredded cheese of your choice
DIRECTIONS:
First, saute the chopped onion and cook the bacon strips. Once cooked, chop the bacon into small pieces. Clean mushrooms and cut off their stems. Set aside 8 stems and mince them. Remove any remaining stem and gills from the mushroom caps, leaving a hollow space for the cream cheese filling.
Next, mix the onion, bacon, and chopped stems to the softened cream cheese. Add chopped garlic and shredded cheese to your liking and continue mixing. Spoon filling into mushroom caps and roll each mushroom (cream cheese side down) in the crushed cheese cracker crumbs. Bake at 350 degrees for 10 to 15 minutes. Let the mushrooms cool and watch them disappear!
