Ingredients: 4 large green peppers
2 cups of cooked white rice (or couscous-optional)
1 pound of mild or spicy sausage, browned (or hamburger, ground turkey, ground pork)
1/2 cup italian seasoned bread crumbs
1 can of tomato soup
Preparation: Cut of tops of peppers, remove core and seeds, rinse
Mix browned sausage, cooked rice, and bread crumbs in large bowl
Add salt and pepper to taste, stir.
Spoon meat and rice mixture into peppers. ( I like to REALLY stuff them good)
Place peppers into large crockpot.
Add 1/2 cup water to tomato soup, spoon over tops of stuffed peppers.
Put remaining tomato soup and water mixture on bottom of crockpot.
Cook on high 5-6 hours, or until done. Lower setting will require additional cooking time.
Enjoy this recipe, and interchange different ingredients to your personal tastes and dietary requirements. It's fun to be creative and adjust recipes!
