Easy and Delicious Breakfast Casserole Recipe

When I was growing up, one of my favorite things about Christmas was the breakfast casserole that my mother made us that morning. It always filled the house with an incredible aroma as we would open up our presents and enjoyed the family atmosphere together. Every time I cook this casserole for my own family, I have those fond memories of Christmas morning with my family flooding through my mind again. I have now started a tradition with my own family where I make this breakfast casserole for a brunch on Christmas morning. It's something that you can whip together the night before you need it and refrigerate it overnight until morning when you're ready to cook it. I wish I could make it for my family more often. My kids love it and my husband raves about it! We serve it along with toast, hash browns, and things like fruit or a danish. Here it is....

Breakfast Casserole

1 1/2 lbs Sausage (cooked & drained)

9 Eggs

3 Cups Milk

1 1/2 Cups Shredded Cheddar Cheese

1 1/2 Teaspoon Ground Mustard

1 Teaspoon Salt

3 Slices Bread (cubed)

Beat the eggs & beat in the milk. Mix the mustard & salt together. Stir in the rest of the ingredients to the egg mixture. Pour into a 7 1/2 x 11 1/2 casserole. Bake for 1 hour at 350* if using a metal pan, or 325* if using a glass pan. Casserole will come out bubbling and golden brown.

For the most part, If I'm doing one batch, I just do two pounds of sausage and omit the salt (since sausage is already salty), because then I don't have a half of a pound left over that I need to use somewhere else or have it go bad in the refrigerator. On Christmas morning, I always make a double batch of this casserole. The left overs are good, even when they are reheated in the microwave! I just put them in a tightly sealed plastic ware and reheat the portion sizes I want to eat at the time. You also don't have to just reserve this for breakfast. It makes a great meal at anytime!
