Ingredients

Serves 4
16 scallops (sea) - Large
1/2 tsp salt
2 Tbsp Pineapple juice or Sherry
8 bacon - slice in half
4 green onion - stems - cut into 1 inch pieces
1/2 tsp sugar
8 water chestnuts - cut in half

Take the sugar and pineapple juice or sherry and mix together in a baking dish. Then add the scallops and let marinate for approximately 30 minutes.

After 30 minutes remove the scallops using a slotted spoon. Now using the salt sprinkle over the scallops.

Lay out the bacon 1/2's and top with a scallop, green onion and water chestnut half. Then fold the bacon over the onion, water chestnut and scallop holding the filling inside the bacon. Then take use a toothpick to secure the bacon and scallop.

Set your broiler at 500 degrees and let preheat, Then using your broiler pan, put the scallops on the pan and broil until the scallops are opaque and the bacon is browned, approximately 10-12 minutes.

Ham Spread On Buns
1 1/2 cups ham (cooked and finely chopped or ground) - 1 Tbsp mayonnaise - 2 Tbsp sweet pickle relish - 1/4 c. celery (diced fine) - 1/2 tsp. Dijon mustard - 1/4 c. onion (diced fine) - 1 (3 oz) pkg cream cheese (softened) - 1/8 tsp pepper - 1/4 tsp salt - 16 small buns (smaller than dinner rolls) -

Blend together the mayonnaise and cream cheese until creamy and smooth (use an electric mixer).Add ham, celery, salt, pepper, onions and relish, stirring until completely mixed. Then chill for approximately 1 to 2 hours.cut the buns in 1/2 and spread the ham spread on one half.

Deviled Eggs with Almonds
6 Large eggs - 4 tsp. almonds (slivered and toasted) - 1 Tbsp. pimento (chop fine) - 2 Tbsp mayonnaise - 1 Tbsp onion (chopped fine) - 2 tsp. sweet pickle juice - 1/4 tsp salt - 1/8 tsp pepper - pimento for garnish -

Place the eggs in a 2 quart kettle, add water to cover eggs. Cook on high heat until the water boils. Once it starts to boil, let it boil for 2 more minutes, then remove from the heat and cover, letting it sit for approximately 15 minutes. Then drain and let cool for approximately 20 minutes.Remove the eggs shells and then rinse of each egg. Cut the eggs in half (from end to end), remove the yolks, set the whites cut side up on a plate. Mash the yolks, then add the pickle juice, onion, mayonnaise, sour cream, almonds, pepper and salt. Mix well. Take the filling and spoon into the egg white halves. When you are done you can top the eggs with pimento for garnish (optional). Cover the deviled eggs and set in the refrigerator to chill.

Dogs in a Blanket
8 hot dogs - 1/3 cup cheddar cheese (shredded fine) - 5 to 6 tsp. barbecue sauce - 1 can Cresent rolls (dough - 8 oz) -

Open the c an of Cresent rolls, carefully unroll and separate triangles. Then cut each triangle in 1/2 (lengthwise). This will make 16 pieces. Spray your cookie sheet or jelly roll pan with non-stick cooking spray. Then place the triangles on the cookie sheet. Lightly top each triangle with barbecue sauce and then top with cheddar cheese.Cut the hot dogs in half. Take the half of the hot dog and put it on the wide end of the triangle and then roll up like a jelly roll. Make sure the point is put face down on the cookie/jelly roll sheet. Do these steps with the rest of the hot dogs and Cresent triangles.Bake at 350 degrees for approximately 12 to 14 minutes ( until dough is golden brown and puffy).
