Ingredients

Serves 4
1 lb Breakfeast sausage
1 Medium yellow onion diced
1 loaf Toasted bread
2 Eggs
1/4 to 1/2 C Milk
3 to 4 stalks Celery diced

Cook the sausage
In a large frying pan crumble and fry the sausage with the diced onion. Do not drain the grease.

Simmer the Celery
Put the diced celery in a small saucepan and add enough water to cover the celery. Simmer on medium high heat until the celery is tender. Do not discard the water.

Toast the bread
Toast approximately one loaf of white bread.

Put it all together
In a large bowl pour in the cooked sausage and onion with the grease. Next run 2 to 3 pieces of toast under water. Wring out excess water. Tear into bite size pieces and add to the bowl of sausage and onion. Continue until entire loaf of bread is used. Pour in cooked celery and about 1/4 C of celery water. Keep the remaining celery water in case you need more liquid. Add two eggs, 1/4 C of milk and salt & pepper. Mix the dressing thoroughly. If the dressing seems too dry add more celery water or milk.

Bake
I prefer not to bake my stuffing in the turkey as my family likes their stuffing crunchy but my mother always stuffed the turkey with this recipe and also made some on cookie sheets for those family members that prefer the stuffing crunchy and brown. I spray a cookie sheet with Pam cooking spray and then spread the stuffing out in a thin layer. Bake at 350 degrees for approx 45 minutes or until stuffing is crunchy and brown
Tip
I always double this recipe as my family always wants seconds. My mom used to make a separate batch of this and add oysters for other family members. Feel free to add whatever you want but I will say this stuffing recipe is so popular because it is so basic and yummy!
