Easy Easter Sunday Dinner

Easy Easter Sunday Dinner that Taste's like Grandma's

Kay Baxter
Hosting an Easter Sunday Dinner at your home does not need to be stressful or cost a fortune. Easter Sunday is one of my families favorite holidays and I like to cook a good down home meal and not spend my entire day in the kitchen.

Here is a menu for our Easter Sunday Dinner. Baked turkey breast with oven baked stuffing, green beans with bacon, mashed potatoes and gravy, oven baked stuffing and hot rolls. Even people who do not like stuffing love this family recipe as it comes out nice and crunchy after being baked in the oven

Easter Sunday morning I start by making the stuffing first. Here are the list of ingredients for the stuffing

Oven Baked Stuffing
1 Roll of your favorite breakfast sausage
1 small onion diced
3 stalks of celery diced
1 egg
1/4 C Milk
1 loaf generic bread
Salt and Pepper to taste

Put diced celery in a small pan and cover with water. Add a little salt. Bring to a simmer and cook until soft. Do not throw out the water

Fry the sausage mixed with onion in a frying pan. Drain grease.

Toast the loaf of bread. In a large mixing bowl put in cooled sausage and onion. Add cooled celery with some of the water. After toasting the bread get each piece wet with water and tear into chunks. Add to mixing bowl. Add one egg, milk, salt & pepper. Stir until thoroughly mixed. Using a large sized cookie sheet spray liberally with Pam. Spread stuffing out on cookie sheet in an even layer. Bake at 350 degrees for approximately 45 minutes or until the stuffing is brown and crunchy. Set aside to warm up later (If you have a double oven you can cook the stuffing when the turkey has 45 mins left)

For the turkey breast remove from bag and wash thoroughly. Pat dry. Cover the outside with butter. Sprinkle with salt & pepper. Insert into a turkey baking bag and bake according to bag directions.

Green Beans
2 cans cut green beans
5 strips bacon
1 small onion

In a med sized pan fry bacon and onion together until done. Add two cans green beans with the water. Salt & pepper to taste. Simmer on stove top for a couple hours to ensure flavors have mixed.

Dream Salad
1 large container of cool whip
1 large can of fruit cocktail
1 small can frozen strawberries
2 bananas cut into bite size pieces

Mix all the above ingredients in a medium sized bowl. Refrigerate until ready to serve.

Gravy
2-4 packets of Butterball instant gravy
prepare according to package instructions

Mashed Potatoes
Boil 5-6 large size potatoes until cooked Thur
Mash with cream and butter.

I normally take the turkey out and let it rest 20 minutes before cutting. During that time I put the stuffing back in the oven to re heat and put in a package of ready to serve rolls. I hope you enjoy this Easter Sunday Dinner menu as much as we do.
