Simple Ways to Make Your Easter Meal Memorable

Here are some menu ideas for your upcoming Easter Sunday dinner along with some fun decorations to accent your table.

Breakfast

Pancakes

1 cup unbleached white flour or ½ cup unbleached white flour and ½ cup wheat flour

1 tablespoon sugar or an alternative sweetener such as agave nectar or stevia

1 tablespoon milled flax seed

2 tsp baking powder

1/8 teaspoon salt

1 cup milk - dairy or an alternative such as soy, almond, or hemp

2 tablespoons vegetable oil

Mix all the dry ingredients in a large bowl. Add the milk and vegetable oil and stir until just well blended. Heat a well oiled pan to medium and drop the batter from a large spoon onto the pan. As the batter drops carefully drip it in the shape of an egg. It might take a little bit of practice at first. Let the pancake cook for a few minutes or until you see bubbles forming and the edges stiffening. Flip the pancake over carefully and allow it to cook for a couple of minutes before removing it from the pan.

Once your pancake "eggs" are done they are ready to be decorated! Try using jams, fruit pieces, yogurt, or even a little chocolate syrup. This is an Easter Sunday breakfast the kids will look forward to each year.

Some side dishes for this breakfast include lean sausages, fresh orange juice, coffee, and strawberry flavored milk.

Snack

Fruit Fondue

Several large chunks of assorted fruit such as:

Bananas

Peaches

Strawberries

Mango

Oranges

Grapes

Wash and peel fruit if necessary and cut into several large pieces. Place the fruit onto a large platter and insert toothpicks into each piece for easy dipping.

Dipping sauces:

Warm honey

Vanilla or fruity yogurt

Chocolate sauce

Garlic Deviled Eggs

6 hard boiled eggs

½ cup low fat mayonnaise

1 tsp Dijon mustard

1 spring onion diced

1 garlic clove diced

Salt, pepper, and paprika to taste

Split the cooked eggs in half longwise and place the yolks into a mixing bowl. Mash the yolks and add the remaining ingredients to the bowl. Fill the cooked egg whites and chill until ready to serve. Garnish with parsley if desired.

Lunch

Ham Sandwich Bar

Several slices of thin to medium thick ham- honey glazed or smoked

Tomato slices

Cheese slices- cheddar, Swiss, pepper jack, and Colby

Sliced red onion

Greens- spinach leaves and lettuces

Different breads- Pita, whole grain, potato, seven grain

Cream cheese

Mustard

Avocado slices

Mayonnaise

Place all the sandwich fixings on the table buffet style and let the family and guests assemble their own gourmet sandwich. Serve with veggie sticks and potato chips.

Decorations

Personalized Easter Eggs

For each family member and guest you can create a personalized Easter egg. Hard boil several eggs for coloring. Before you dip your hard boiled egg in dye write the name of the person on the egg with a white crayon. You can also add a flower or a smiley face. After the egg has been dipped in dye the letters and designs written in wax will show up nice and clear. Place the personalized eggs on your Easter Sunday table to show people where to sit for the meal.
