After much trial and error, I've created a fruit cobbler recipe that can be prepared in about forty minutes (including prep time). It is ideal for the working or busy woman who wants to make a homemade dessert. This cobbler is best made in a cast iron or other stove-oven skillet (that is a skillet that can go from the stove into the oven).
Serves 4-6 people.
You'll Need:
1 1/2 cups of baking mix (like Jiffy or Bisquick)
1 1/2 cups of white sugar
1/4 cup of brown sugar
2 teaspoons of lemon juice
1 1/3 cups of milk
2 cups of frozen fruit (I usually buy a big bag of assorted frozen fruit)
Oil Spray
Cast Iron Skillet
Preparation:
1. Preheat oven to 375 degrees.
2. Spray cast iron skillet with oil and heat.
3. Add 1/4 cup of sugar and one teaspoon of lemon juice. Stir until sugar dissolves.
4. Add frozen fruit, and coat with sugar mixture.
5. Let cool.
6. Combine baking mix and white sugar in mixing bowl.
7. Add milk and 1 teaspoon of lemon juice.
8. Mix all ingredients together.
9. Pour over fruit mixture. It may look a little watery but will bake beautifully.
10. Bake for about 30-35 minutes or until done. When done the cobbler will be a golden brown. Watch the center of the cobbler as it will be the last to finish baking. Don't over bake or the cobbler will dry out.
Cool and serve with ice cream or a whipped topping. This recipe can be used for any fruit cobbler and works very well with berries.
