Rinse the seeds and remove all the pulp. Lay out on paper towels to dry overnight. Set the oven to 250 degrees F. Put seeds on a cookie sheet and spray with cooking spray. Sprinkle with your choice of seasonings - parmesan cheese, seasoned salt, onion powder, garlic salt, salt, etc and toss to coat. Bake about an hour, stirring every once in awhile, until lightly browned. Let cool and enjoy!
Pumpkin seeds taste great by themselves or in a snack mix. Try mixing your seasoned pumpkin seeds with raisins, peanuts and M&Ms for a trail mix. They also taste great tossed in a salad or in your favorite granola bar recipe. I also like to add a 1/2 to 1 cup of pumpkin seeds to pumpkin bread or pumpkin muffins.
Pumpkin seeds are a great source of fiber, omega-3 fatty acids and protein.
