Easy Garlic Mashed Potatoes

Ingredients:

2 large potatoes (or 4 small potatoes)

½ cup of chives, chopped

1 tbsp salted butter

2 tsp olive oil

1 ½ tsp crushed, refrigerated garlic

Directions:

Peel, wash and cube potatoes. Boil a pot of water. Once water is boiled, place potatoes into pot and cover. Let cook for about 20 minutes, stabbing the potato pieces with a fork to see how soft they have become. When the potato cubes are soft enough that the fork pokes right through them with ease, turn off the burner and strain them. Place the potatoes back in the pot and mash with a potato masher. Mash fully, making sure that there are no lumps of any kind. Next, add the olive oil and the garlic, as well as the chives and stir with a wooden spoon, circling the circumference of the pot and folding inwards. Do so until all ingredients are fully mixed. Next add butter and mix it into the potatoes, allowing it to melt in. To be used as a side dish, but really, it's yours to enjoy!
