Easy, Healthy Chili

his easy, healthy, chili recipe, which I adapted from one in the South Beach diet cookbook, is one of my husband's favorite dishes. Theirs was easy, but mine is even easier. It is cheap, easy, quick, and good for you. What more could you want?

I use ground turkey in mine because it is healthier than ground beef, but you can substitute lean ground beef if you prefer. If you don't like your chili spicey, substitute regular tomatoes for the tomatoes wth green chiles. The whole thing can be done in thirty or forty minutes.

This recipe serves 4.

INGREDIENTS;

1 lb. ground turkey
1 can tomatoes with green chiles
1 small can tomato paste
chili powder to taste
1 tsp sugar or sugar substitute (optional)
1/2 can kidney beans
1/2 can black beans
1/2 can chickpeas

1. Break up the ground turkey and cook in a nonstick frying pan until brown.

2. Add the can of tomatoes, the tomato paste, the sugar or sugar substitute,
and the chili powder to the meat and mix well. Heat thoroughly.

3. Drain the kidney beans, black beans, and chickpeas. Set aside half of each can for
another purpose.

4. Add the beans one at a time to the chili mixture, mixing thoroughly. Cook until everything is a consistancy that pleases you, about ten or 15 minutes more.

You can serve this chili with reduced-fat sour cream or shredded cheese, or just heap it in bowls and devour it. It is packed with protein and about 450 calories a serving.
