1 Small onion
3-4 cloves of garlic
1 tbs oil
Pinch of salt
I pkg chopped frozen spinach (thawed)
Pinch Thyme
500g cream cheese
500ml sour cream
1/4 cup Parmesan Cheese
1/2 cup cheddar cheese shredded
In a frying pan combine oil, onions and garlic.
Sauté until the onions are soft and translucent.
Add drained spinach and thyme.
Sauté a few minutes longer until everything is mixed up and warm.
Using a hand blender or whisk combine cream cheese and sour cream in large bowl.
Add parmesan and 1/2 of the cheddar cheese (1/4 cup).
Add the onion and spinach mixture.
Once everything is mixed together pour dip in to a shallow pan.
Sprinkle remaining cheddar on top.
Bake in oven at 400 for about 10 min, until cheese is melted and a bit golden.
Serve with crackers, nachos or pita bread.
