Maple Sausage, Chorizo, and Turkey Sausage Recipes

Whether you like a patty in a breakfast sandwich, some links alongside your pancakes or crumbled bits in a breakfast burrito, you cannot go wrong with breakfast sausage. Like most foods, it is even better when you make it from scratch. Didn't know you could do that? These easy homemade breakfast sausage recipes will show you how.

Maple Sausage Patties

These patties are reminiscent of those you might buy in the frozen foods section of your grocery store, but this easy homemade breakfast sausage recipe is fresh and devoid of any additives or preservatives. In addition, if you find pork butt on sale you can make several pounds and freeze the patties for those busy weekday morning breakfasts, as this homemade breakfast sausage recipe doubles (and triples) well. Grind the pork yourself or ask your grocery store butcher to do so for you.

Ingredients

1 pound ground boneless pork butt
1 tablespoon real maple syrup
1 teaspoon sage
1/4 teaspoon marjoram
3/4 teaspoon thyme
1 teaspoon red pepper
1/4 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper

Directions

Combine the ground pork and the maple syrup in a medium mixing bowl. Combine the spices in a small bowl, mixing thoroughly. Pour spice mix into the pork and use your hands to mix in the seasonings thoroughly. Shape into patties and cook over medium heat for five to six minutes per side, until meat is browned through to the center. Alternatively, place the patties on a cookie sheet and freeze for 15 to 30 minutes. Remove from cookie sheet and place in zip-top freezer bags. Store in the freezer and remove individual patties as needed.

Chorizo

If you are of the mindset that spicy is good and spicier is better, you may enjoy making your own chorizo. Make this easy homemade breakfast sausage recipe the next time you are craving a fiery chorizo and eggs breakfast burrito. Add diced, fried potatoes for an even heartier meal.

Ingredients

1 pound ground pork
2 tablespoons white vinegar
1 tablespoon chili powder
1 tablespoon minced garlic
1 tablespoon water
1/2 teaspoon cumin
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon sugar

Directions

Combine all ingredients in a medium glass bowl. Cover and refrigerate overnight or up to a week. Cook the desired amount of this homemade breakfast sausage recipe over medium heat until the chorizo is bubbling and separated. Whisk desired amount of eggs in a small bowl and pour into pan over chorizo. Cook, stirring often, until eggs are cooked through. Spoon into warmed flour tortillas.

Turkey Sausage

If you are watching your weight or simply are not a fan of pork, you can still enjoy a homemade breakfast sausage recipe by using ground turkey breast. You can replace the turkey with lean ground beef as well, if you choose.

Ingredients

1 pound of ground turkey breast
1 teaspoon of cumin
1/4 teaspoon of basil
1/2 teaspoon of garlic salt
1/4 teaspoon of oregano
1/4 teaspoon of pepper
1/2 teaspoon of sage
1/2 teaspoon of salt

DIrections

Mix ingredients thoroughly by hand in a medium bowl. Shape into patties. Press your thumb into the center of each patty to create an indentation. This will prevent the patties from expanding in the center as they cook, which can lead to underdone centers or burned edges. Cook over medium heat in a small amount of oil for five to six minutes per side, until meat is browned through to the center.
