Easy Homemade Chicken and Veggies for the Whole Family

A Healthy, Economical Full Plate of Chicken, Veggies, and No Need for a Side Dish!

This great meal idea was discovered by my girlfriend and I while we were making a barbecue chicken and veggie homemade pizza. We loved the pizza topping we created so much that we made a similar dish a few days later, but without the pizza crust!

Ingredients

Serves 4
1.5 lbs. Chicken Breast
1 onion Red Onion
4 peppers Red, Green, and/or Yellow Peppers
6 oz. Spinach Leaves
3/4 cup Your Favorite Barbecue Sauce

Cut Chicken, Onions, and Peppers
On a cutting board, cut thawed chicken into 3/4 inch squares. Cut onion and peppers into small, bite-sized pieces.

Cook Chicken
In a covered pan, cook chicken until nearly or completely cooked.

Add Onions and Peppers
Add chopped onions. After 2 minutes of allowing onions to cook with chicken, add chopped peppers. Allow this mixture of chicken, onions, and peppers to cook for 2-4 minutes or until peppers are clearly beginning to show signs of being "cooked."

Add Spinach
Lastly, add all of the spinach. At first, it may seem like there is way too much spinach. However, the spinach will cook down quickly to create a great flavor and texture for the dish. If all of the spinach does not fit in the pan at once, you can add as much spinach as will fit and add more as the spinach cooks down.

Finish Off With Sauce
Add 3/4 cup of your favorite "sweet" barbecue sauce and stir (Sweet Baby Ray's is what we use). As soon as the barbecue sauce is heated, remove entire dish from heat and serve.
Tip
Be sure chicken is fully cooked before enjoying.
