Easy, Inexpensive Crockpot Chicken Recipes: Let Your Slow Cooker Do the Work

Weekday dinners are hectic for you. Perhaps you are gone at work all day and by the time you get home, it is too late to prepare a nice, homemade dinner. Or maybe your days are spent shuttling kids back and forth and keeping up with your home and all that goes with being a mom. You hate to feed your family fast food all the time. You wish you could find some ideas that are healthier and more affordable, but do not require hours slaving over the stove.

Chicken is a meat that is both healthier and less expensive than many other meat choices. Fortunately, you can use your Crockpot to make delicious, healthful, economical meals. Here are some recipes you can try!

Crockpot Chicken with Cream Sauce Recipe

Ingredients:
3 lbs chicken
1 package Italian salad dressing mix or 2 tablespoons Homemade Italian Dressing Mix
4 tablespoons butter or margarine
1 small onion, chopped
1 garlic clove, chopped
1 can cream of chicken soup
8 ounces cream cheese
1/2 cup chicken broth

Directions:
Place the pieces of chicken in the Crockpot. Sprinkle with Italian dressing mix. Melt two tablespoons butter or margarine and drizzle over chicken. Turn Crockpot on low and cook for four to six hours. Melt the remaining butter or margarine and use to sauté onion and garlic and add the remaining ingredients while stirring until smooth. Pour into Crockpot and cook on low for another thirty minutes to an hour. Serve over noodles.

Easy Crockpot Barbecue Chicken Sandwiches Recipe

Ingredients:
1 pound boneless skinless chicken breasts or thighs
1 jar of barbecue sauce, or 2 cups homemade sauce
1 medium onion
Hot sauce
4-6 buns

Directions:
Place the chicken pieces in the Crockpot. Slice onion and place on top of chicken. Pour barbecue sauce over the chicken. Add a few dashes of hot sauce. Cook on low for six to eight hours. Shred chicken with two forks, pulling the meat apart. Serve on Kaiser rolls or hamburger buns with carrot and celery slices and baked beans.

Crockpot Chicken Alfredo Recipe

Ingredients:
1 jar Alfredo sauce (or garlic Alf redo sauce)
4 to 6 boneless chicken breasts or thighs (1 to 2 pounds)
4 ounces sliced mushrooms

Directions:
Pour a third of the sauce into the Crockpot and place the chicken pieces in. Top with mushrooms and remaining sauce. Cook on low for 6 to 8 hours. Serve atop cooked spaghetti or fettuccine noodles. Sprinkle with Parmesan. Add a loaf of crusty bread and a bagged salad for a complete meal in no time!

    I do a similar version of crockpot chicken cream recipe. Can't say enough about how much I rely on my crockpot. It is espcially useful on these hot summer days.
