Easy Lemon Dutch Baby

A Dutch baby is sweet, puff pancake. This recipe is impressive enough to serve guests but simple enough to make on a lazy weekend. Substitute lemon and sugar with syrup or fruit if desired.

Ingredients

Serves 4
3 Tbsp Butter or margarine
3 Room temperature eggs
3/4 Cup Milk
3/4 Cup Flour
1 Tbsp Sugar
1 Tsp Vanilla
1 Pinch Salt
1/4 Cup Powdered sugar
1/2 Medium Lemon

Directions for Easy Lemon Dutch Baby

Preheat oven to 425 F. Place butter or margarine in a pie plate or oven safe skillet. Place in center rack of oven.

Whisk or blend together eggs and milk in a medium bowl until creamy yellow. Stir in milk, flour, vanilla, sugar and salt. Blend until lumps are gone. Remove pie plate or skillet from the oven. Pour the melted butter or margarine into the batter. Mix well. Pour batter into pie plate or skillet and return to oven.

Bake for 25 minutes. Remove Dutch baby from oven and allow to cool for about five minutes. Sprinkle with powdered sugar. Squeeze juice from lemon half on top. Slice into wedges and serve.

    Never heard of it either. I like lemon curd on puff pastry so I'm sure I'd like this.
