Easy Light Brunch Menu for Christmas Morning

Christmas morning is hectic enough without trying to pull off a big breakfast. If you have guests Christmas morning and are planning to have a big meal later in the day, a light Christmas morning brunch makes perfect sense.

Cheese and Fruit Platter. A cheese and fruit platter is a traditional German breakfast year-round. At Christmas time apple, pear, and orange slices are good choices for a fruit platter. (Most other fruits are a little too "iffy" in the winter.) Slices of mild cheese are just right for brunch. Provolone, mild cheddar, and Colby cheese are always popular choices. A cheese and fruit platter can be put together in a matter of just a few minutes, so it makes for a very easy brunch dish.

Cookie Platter. I know, we shouldn't have cookies for breakfast, but it's Christmas! Since you probably have a bunch of cookies in the house anyway, arrange them on a platter and serve them on your brunch buffet. Everyone loves a treat for Christmas!

English Muffins. A bagel and cream cheese assortment might seem like the thing to have at brunch, but you can save a significant amount of calories by substituting English muffins and low-cal margarine. English muffins come in a variety of flavors including plain, whole wheat, cinnamon and raisin, and blueberry. Make a lovely platter of different flavors of English muffins surrounding a ramekin of soft margarine and set it by the toaster for guests to enjoy.

Bacon Impossible Pie. Bisquick's Bacon Impossible Pie is a lot like a quiche Lorraine, only much easier to make. As long as you fry the bacon and have the cheese shredded the night before, you can throw together an Impossible Pie very quickly. (For the recipe, click here.) Once you put it in the oven you get to enjoy the wonderful aroma! Plus the kitchen takes on that warm and cozy feel. Perfect for Christmas morning.

Pastry Tray. Fill your pastry tray with fruit Danish, kuchen, panettone, croissants, donut holes, strudel, sweet rolls, bear claws, or eclairs. It's not low-cal, but it's an easy dish to prepare ahead of time, and you can give yourself a break because it's a holiday.

Drink selection. In order to keep Christmas morning brunch simple, keep the drink selection to a minimum. Milk, orange juice, and cranberry juice are popular choices for cold drinks. For hot drinks, coffee, tea, and cocoa cover all the bases.
