Easy Meal Ideas to Stretch that Budget

Eating healthy is becoming harder and harder lately. Having a meal period is a blessing. Despite financial troubles everyone has to eat to live, and a lot of people live to eat! There are many quick healthy meal ideas that are also inexpensive. They may require more work or for people to spend a few cents more when doing their weekly or monthly shopping, but the health benefits can be tremendous.

When bought in bulk amounts beans and whole grain rice and pasta, can be excellent meal starters. Placing your favorite beef stew recipe over rice or bread makes a great quick meal and extends the use of that dish. Beans and whole grains and add more fiber to everyday recipes. Beans mixed with turkey hot dogs or sausage make a filling and extraordinarily inexpensive meal.

When shopping for fresh produce try buying only amounts you know you will use. Supermarket salad bars are a very good resource for fresh vegetables already prepared in slices or pieces. Buy fruits on an individual basis instead of in large containers or bags. If you do buy fruits and vegetables in large amounts, find creative ways to use them. Add unused vegetables to soup or pasta recipes. Shred leftover apples and add them and a bit of cinnamon to prepared pancake mix to bring extra nutrition to breakfast.

Making a variety of quick healthy meals from the leftovers of a larger and more traditional meal is also and option to help make quick meals. Sunday's roast chicken can become quesadillas on Monday for dinner. Leftover pasta sauce can be added to pizza dough with toppings and cheese for pizza with a salad.

Leftover sliced vegetables can make crunchy snacks and side dishes in lunches. Air popped popcorn with parmesan cheese and garlic powder, pretzels, or raisins make healthy snacks. Baking cakes, cookies, and other treats yourself can also be healthier than packaged versions which often contain preservatives, chemicals and dyes.

There are many ways to eat healthy meals on a budget, with a little planning and creativity a little can go a long way. Meals from franks and beans to a pizza and salad can be done on a budget.
