Easy Meatloaf with a BBQ Taste

Great for Leftover Sandwiches!

Meatloaf with BBQ Topping

Ingredients:

Meatloaf
1.5 lb ground beef or ground buffalo (bison)
1/4 finely chopped onion

Topping
1/2 c Tomato ketchup
1/4 tsp dry mustard
1TB brown sugar

Gently knead the onions into the ground meat until completely mixed.
Push the meat into a loaf pan until there are no air spaces and the top is flat.

Mix the topping ingredients in a measuring cup and pour over the meat in the loaf pan.

Heat an oven to 350 degrees.
Cook the meatloaf for 1 hour.
The topping should be dark at the edges.

This is best served after standing for 5 minutes. Slice into 1 inch slices and serve with your favorite potatoes and vegetable.

For leftovers: Place the remaining meatloaf, unsliced in a covered container, not the original loaf pan, in the refrigerator. Slice and make a sandwich, adding you favorite condiments.
