Easy Mexican Cornbread Recipe

Sometimes, you just do not feel like spending a lot of time in the kitchen. So to free up some time while making a delicious dinner for your family, try this easy recipe for Mexican Cornbread. Your family will say, "Olé!"

This recipe makes 6 to 8 servings. Here are the ingredients you will need:

1 lb. ground beef

'¼-cup water

2 pkg. Mexican cornbread mix

'¼ cup chopped onion

Salt, pepper, chili powder, garlic powder (or garlic salt) and seasoned salt to taste

2 tbsp. chopped jalapenos

1 cup grated Mexican cheese blend

1 pkg. taco seasoning mix

1 small jar of picante or salsa (mild, medium or spicy depending upon your taste)

1 can cream style corn

In a medium-sized skillet, brown ground beef with chopped onion. Drain well and add seasonings including the taco seasoning mix. Stir in '¼-cup water. Simmer until most of the liquid absorbs. Set to the side.

Mix the two packages of Mexican cornbread mix in a large mixing container. Set to the side.

Grease an oblong 9 x 13 inch casserole dish, preferably, a deep-dish casserole container. A deep cast-iron skillet will also work well. Pour half of the cornbread mixture in. Next, add the taco-seasoned meat. Cover with the creamed corn. Add the jar of salsa or picante sauce and spread evenly. Add the cut-up jalapenos and sprinkle the grated Mexican cheese blend over the top. Finally, add the last layer of cornbread on top of the mixture. Bake in a 425-degree oven for 30 minutes.

This is so easy; you will want to make this again and again! A garnish of sour cream and/or parsley works well with the dish. Enjoy!
