Easy Mexican Lasagna

Easy Mexican Lasagna
prep time & cook time less than 45 minutes

What you'll need:
1 pound lean ground beef or ground chicken
1 can of sweet corn
1/4 cup chopped onions
1/4 cup chopped bell peppers (red & yellow look really nice in this dish)
1 can refried beans
1 can enchilada sauce (red or green whichever you prefer)
1 small can chopped green chilies
8 oz. package of shredded cheddar or mexican style cheese
6 large flour tortillas
1 medium size jar of your favorite salsa
1 tsp. garlic
1 tsp. season salt
salt & pepper

Preheat oven at 350 degrees.Brown ground beef ( or ground chicken) adding in garlic powder,season salt & salt & pepper,after browned set aside.Chop up onions and bell peppers,also set aside. In a large glass baking dish spray the bottom with a light coating of cooking spray layer two of the flour tortillas,spread about 1/2 of the refried beans over the tortillas,spoon out about 1/2 of the ground beef over the beans,use about a 1/4 of the enchilada sauce pouring it over the beans and beef,sprinkle about half of the peppers,onions and corn over that,top with cheese,repeat this layer,with the remaining two tortillas place over the top use remaining enchilada sauce and cheese to cover.Bake in preheated oven for approximately 20 minutes,cut with a pizza cutter ( I find this the easiest way ),top with salsa and serve.I also cut up black olives and lettuce but that is just per preference.
