Easy Mexican Wrap Recipes for Cinco De Mayo

Wrap Up Your Cinco De Mayo Party Quick and Easy, Using Flour Tortillas and a Few Basic Ingredients

Normally most Americans don't celebrate Cinco de Mayo, but it is a fun holiday that you can have a nice theme party for that people will enjoy getting into. At this time of year most of the grocery stores have many of the Hispanic foods on sale, to accommodate the people that do celebrate the holiday, so you can get most of your foods for a party at good prices.

Here are a couple of fun, easy recipes to try out that people will surely want more of!

Easy Rice and Bean Wraps

2 Tablespoons margarine or butter
1 package (6.8 oz) Rice a Roni Spanish Rice
1 jar (16 oz) salsa
1 can (15 oz) black or red kidney beans, drained and rinsed
1 cup Green Giant Mexicorn, drained
8 flour tortillas (8 inch), warmed
Shredded cheddar cheese, optional
Sour cream, optional

In a large skillet over medium-high heat, saute rice-vermicelli mix with margarine until vermicelli is golden brown. Add 2 cups water, salsa and special seasonings; bring to a boil. Reduce heat to low. Cover and simmer 15 to 20 minutes or until rice is tender. Stir in beans and corn and let stand 5 minutes b
before serving. Serve in tortillas with cheese and sour cream, if desired.

Here is a great recipe that can be made ahead of time and can be served warm or cold. Easy choice for a Cinco de Mayo luncheon or an any day change up for sandwiches.

Tortilla Roll-ups

Miracle Whip Salad Dressing or Kraft Real mayonnaise
Shredded Cheddar cheese
Flour tortillas
Chunky salsa
Shredded lettuce
Sliced deli meat of choice - roast beef, chicken, turkey or ham

For each serving spread dressing or mayonnaise and salsa on a tortilla and sprinkle it with cheese. Top with lettuce and meat and then roll up.

If not eating immediately wrap each tortilla in plastic wrap and refrigerate until the time it is to be served.

Great variation to try: For hot roll ups, prepare as directed, except omit lettuce. Wrap each tortilla in paper towel and microwave on high 1 minute to 1 minute 15 seconds or until the wrap is thoroughly heated.
