Easy to Make Mild Chili

As Fall and cold weather rolls around, it's time to pull out the crock-pots and start making some healthy and hearty cool-weather foods. One of my favorites is this easy Mild Chili Recipe. It takes only about 15 min to pull together and then simmers in the crock-pot for 6-8hrs. It is packed with protein and has a vegetable base. To save money I buy the store brand ingredients or whatever is on sale. You will need a 6 quart or larger crock-pot.

Ingredients:

5 15oz cans of Kidney Beans (2 light and 3 dark)
2 28oz cans Diced Tomatoes
1 26oz can of Condensed Tomato Soup
1.5lbs of Lean Ground Turkey
1/2 of a yellow Onion diced
2 or 3 sticks of Celery finely chopped
1/4 cup of finely chopped Sweet red Pepper
1/8 tsp (a dash) of ground Cinnamon
1 packet mild Chili seasoning (Walmart brand)
1/2 cup water

Pick your favorite Chili toppings:
Shredded Cheddar Cheese
Sour Cream
Crackers
Corn Bread makes a great side

In a large pan saute Onion, Celery, and Red Pepper in a little bit of olive oil or butter. Add ground turkey and cook until no longer pink. Add 1/2 can of tomato soup and 1/2 cup water. Stir in the packet of chili seasoning and Cinnamon. Simmer for 5 min.

Pour Beans, Tomatoes, and remaining Tomato soup into crock-pot. Add ground beef mixture and stir. Set crock-pot to Medium heat and cook until boiling (about 2 hours). Turn heat to low and cook for remaining 4-6 hours. To speed up cooking, cook on high for 3-4 hours, stirring occasionally.

Makes 8-10 Servings

Top with your favorite Chili toppings. I like cheddar cheese and a dollop of sour cream. Corn bread or Corn muffins make a great side.
