Easy Mushroom Recipes for Christmas and New Year

1) Mushrooms And Broccoli Steamed Rice:

Ingredients:

  • 1/2 Cup mushroom chopped
  • 1 Cup of Broccoli (cut in to small florets)
  • 1/2 Cup fresh cream
  • 1/2 tsp White pepper powder
  • 4-5 tsp Oil
  • Salt to taste
  • 4 Cups cooked rice

Preparation method:

  • Take a pan and heat 1 tsp of oil.
  • Add broccoli florets and fry for 2-3 min.
  • Add mushrooms and fry both on a high flame till done.
  • Add enough salt and white pepper powder to this.
  • Add cooked rice and mix well.
  • Toss this with fresh cream.
  • Mushroom And Broccoli Steamed Rice is ready.

2) Mushroom Patties:

Ingredients:

  • 100g Mushrooms
  • 25g Peas
  • 60g Potatoes
  • 10g Oil
  • 20g Onions
  • Chili powder
  • 1 tsp Lemon juice
  • 1/2 tsp Grated ginger
  • 1 tsp grated garlic
  • Salt

Preparation Method:

  • Boil the mushrooms, potatoes and peas.
  • Peel off and mash the boiled potatoes.
  • Saute chopped ginger, garlic and onions in oil.
  • Mix up mushrooms, lemon juice, peas, salt and chili powder.
  • Make the mashed potatoes into cups. Stuff the potatoes with above mixture.
  • Join the edges together and make them flat. Fry them till they turn brown.
  • Mushroom Patties are ready to eat

3) Mushrooms And Tofu Stuffed Bell Peppers:

Ingredients:

  • 5 Green bell peppers
  • 1 Cup tofu
  • 2 cans of tomato soup
  • 1 Rib of celery
  • 1/2 Cup of chopped mushrooms
  • Freshly ground black pepper
  • 1 Cup of mixed vegetables, chopped
  • 1 Cup brown rice, cooked
  • 1 Onion, chopped

Preparation Method:

  • Cut the potato and carrot into very small pieces.
  • Fry the chopped mushrooms, onion, and celery in vegetable stock until tender.
  • Add same amounts of mixed vegetable, cooked brown rice and tofu in a bowl. Mix fried onion mixture and freshly ground pepper to bowl.
  • Slice the top off of the peppers and put them aside. Remove the seeds then add peppers to boiling water.
  • Boil very briefly for few minutes and remove from the pot and then rinse with cold water.
  • Put the peppers in baking dish and fill each with mixture.
  • Then pour tomato soup over the peppers and separate the cap over each pepper.
  • Cover the baking dish and bake at 180 degrees Celsius for one hour.

Serve.

4) Mushrooms and Peas gravy:

Ingredients:

  • 1 Cup of sliced mushrooms
  • 1 Cup of green peas
  • 2 Green chillies
  • 2 tsp of garlic
  • Small piece of ginger
  • 1 Onion, sliced
  • 2 Tomatoes
  • Chopped cilantro
  • 1 tbsp Oil
  • 1 Cinnamon
  • Salt to taste

Preparation Method:

  • Grind chilies, ginger, garlic and cinnamon to a fine paste.
  • Heat oil and fry sliced onion until it turns golden brown. Add the paste.
  • Add in chopped tomatoes, peas, mushrooms & salt and cook briefly.
  • Add a cup of water and heat on a slow fire.
  • Garnish with chopped cilantro on the top & serve hot.

5) Mushroom Rice Recipe

Ingredients:

  • 1 Cup of Rice
  • 1 Cup of Sliced Mushrooms
  • 1 Tsp Red Pepper Flakes
  • 1 Tsp Oregano Leaves
  • 1 Tsp Parsley Flakes
  • ½ Cup Minced Onion
  • 2 Tsp Margarine or oil
  • Salt to Taste

Preparation Method:

  • Heat the margarine or oil.
  • When hot, add minced onions and sauté till they become brown.
  • Add the pepper flakes, oregano leaves, parsley flakes.
  • Add uncooked rice and mushroom.
  • Pour the two cups water, add salt and cook well.
  • Garnish with cilantro.
