Ingredients

Serves 8
4-5 lbs pork shoulder
8 large peeled and quartered potatoes
1 lb baby carrots
1 medium thinly sliced onion
2 lbs sauerkraut
2 medium peeled, cored and thinly sliced apples (optional)

Cover bottom of the crockpot with a quarter to a half inch of water. Place pork shoulder in crock pot.

Layer all other ingredients, in any order around the pork.

Cook on low for 8 hours or until the meat, carrots, and potatoes are fork tender.
Tip
I like to rinse the sauerkraut in a colander before I use it.
