The necessary ingredients are:
• 2 tablespoons of olive oil
• ¾ cups of red onion chopped finely
• 2 cloves are garlic that are minced
• 1 quart of chicken stock (broth will work too)
• 1 cup of ground cornmeal (coarse works best)
• 3 tablespoons of unsalted butter
• 1 ½ teaspoons of kosher salt
• ¼ teaspoon of ground black pepper
• 2 ounces of grated parmesan cheese
Here are the easy steps to make Polenta:
1. Preheat the oven to 350 degrees
2. In oven safe pan that is large, heat the olive oil over medium heat.
3. Add the red onion and salt until the onion start to become clear.
4. Lower to low heat and add the garlic for about 2 minutes.
5. On high heat, add the chicken stock, bringing it to a boil.
6. Slowly add the cornmeal while constantly whisking
7. Cover the pot and place it in the oven for about 40 minutes.
8. Stir every 10 minutes to prevent clumping.
9. Once the mixture is creamy add the salt, pepper, and butter.
10. Slowly add the parmesan cheese
This Polenta can now be served as is (hot) or put in a cake pan and refrigerated over night.
