This is a very easy potato soup recipe. Cooking with your crock pot is the next best thing to hiring a chef. And, it doesn't heat up your kitchen, so you can enjoy this winter favorite any time of year.
6 to 8 medium to large potatoes, peeled and diced
2 carrots, sliced
2 stalks celery, sliced
1 onion, diced
1 tablespoon dried chives
5 cups water
Salt and pepper to taste
Place ingredients in the crock pot and cook on low for about 8 hours or until vegetables are tender. Stir in a can of evaporated milk and 4 tablespoons of butter. Allow the butter to melt. Serve this soup warm.
