Easy Quick Atkins Lunches and Dinners

While on the Atkins Diet is is a good idea to drink extra water. Being on a very high protein diet your kidneys will be stressed with out the extra flush of more water so be sure to get in at least those eight glasses daily.
Tuna Wraps
Mix solid white tuna with mayo breaking the tuna down well to smooth it. Add celery and onion or what ever fresh vegetables you want chop and add them into your salad, bell pepper is nice. Wash and dry your lettuce leaves well. Use only the large leaves, the small ones can be chopped and added to the tuna or used in another salad. Put a golf ball sized scoop of tuna on the lettuce leaf and roll it so that the tuna is contained. Pin the wrap closed with a toothpick and go on to the next leaf of lettuce and repeat the wrapping process. When you have filled enough lettuce leaves for your meal, about two or three per diner should suffice, serve and enjoy with sugar free dill pickle spears and a large glass of water.
Egg Salad Wraps +
Follow the same process as above using chopped egg salad with chopped onion and celery. Other variations can be used too. You can wrap a beef salad, spicy pork slices, sliced ham and swiss cheese with mayo. Almost any sandwich filling can be enjoyed wrapped in lettuce. You could even serve a hot dog with mustard on a lettuce leaf.
Liver Stew.
Four or five slices of bacon.
A medium size onion chopped.
Two large fresh tomatoes, chopped or canned tomatoes to equal the same volume.
One pound of chicken livers.
Rinse the chicken livers well and set them aside to drain. Put the bacon into a large sauce pan and fry it over medium heat until it is crispy. Remove the bacon from the pan and set it aside leaving the hot bacon fat in the sauce pan. Using the hot bacon fat, fry the chopped onion until golden. Add the chicken livers and cook until they have lost their dark red coloring. Than cook for three minuets more. Add the tomatoes and allow them to break down while cooking. Crumple the bacon and stir it it to the pan with the liver, onions and tomatoes. Serve with a large glass of water on the side and enjoy.
For non Atkins followers this can be served over rice, pasta or mashed potatoes while those on the Atkins Diet can enjoy it without the starch.
