Easy and Quick Bread Recipes for Autumn

Here are two classic quick breads that are easy to put together for both company during the holidays and for family for breakfasts and snacks. Serve both breads cold with a sandwich spread like honey butter, or warm with a scoop of ice cream or whipped cream.

Bake each in standard loaf pans that have been prepared by lightly greasing them. For individual pans that will be given, fill the pans about 1/2 to 2/3 up the way. Bake until the loaves test done in the center of the loaves.

Quick Pumpkin Loaf Bread

1 2/3 cup sugar
1/2 cup canola oil
1 cup canned pumpkin
1/2 cup water
1 2/3 cup all purpose flour
2 large eggs
1/2 cup walnuts
1/2 cup raisins
3/4 tsp salt
1 1/2 tsp pumpkin pie spice
1 tsp baking soda
1/2 tsp cinnamon

In a mixing bowl, combine the sugar, oil, canned pumpkin, water and flour together. Stir in the flour. Mix in the eggs. Stir in the walnuts and raisins. Last, add in the spices and salt with the baking soda.

Pour into a prepared pan and bake at 350 until the bread tests done, about an hour.

Banana Walnut Spice Bread

1/2 cup plain shortening
1 cup granulated sugar
2 large eggs
1 cup mashed well-ripened bananas
2 cups all purpose flour
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
1/3 cup chopped walnuts

In a mixing bowl, cream the shortening and sugar until well blended and creamy. Add in the eggs one at a time until well blended. Add in the mashed bananas. Add in the flour and baking soda and salt. Lastly, stir in the walnuts.

Pour into a prepared pan and bake at 350 until the bread tests done, about an hour.

Chopped Apple and Pecan Bread

2 cup flour
1/4 tsp salt
1 tsp baking soda
1 1/4 tsp baking powder
1 cup granulated sugar
1/2 cup butter flavored shortening
2 eggs
1/8 cup milk
1 cup small chopped apple
1/3 cup pecans, chopped
1 tsp vanilla extract

In a mixing bowl, stir the flour, salt, baking soda, and baking powder together. In a separate bowl, cream the sugar and shortening together. Stir in the eggs and mix until well combined. Add in the milk and dry ingredients in parts. Stir in the chopped apples, the pecans and the vanilla.

Pour into a prepared pan and bake at 350 until the bread tests done, about an hour.
