How to Make Gluten Free Chicken Enchiladas for the Whole Family
But, none of the gluten eaters ever shied away from my mother's homemade chicken and green chili enchiladas. They are a family favorite, even to this day. Hopefully you'll have the same results if you experiment with her easy, tried and true recipe for a gluten free dinner.
Gluten Free Chicken & Green Chili Enchiladas
Ingredients
1 Bag of Corn Tortilla Chips
5 Pieces of Chicken
12 oz. of Evaporated Milk
1 lb. of Cheese
16 oz. Sour Cream
4 oz. Green Chilies
14.5 oz. Chicken Broth
Directions
Cook the chicken at 400 degrees for about 45 minutes, and shred it after it has cooled. Combine all liquid ingredients into a deep cooking pan. Put on the stove and turn the heat to medium-low, stirring frequently. Leave on the stove until the sour cream is melted. Layer the following in a 9 by 13 inch pan: flattened chips, shredded chicken, grated cheese, sauce, and repeat. Bake in the oven at 375 degrees for about 20 to 25 minutes. According to your preferences, you may or may not want to cover the top of the pan while baking. And enjoy!
