Use a medium sized bowl suitable for dipping bread into the egg mixture. Mix two eggs, one teaspoon of nutmeg, one-teaspoon vanilla, five teaspoons of sugar and two teaspoons of cinnamon into the bowl. Blend in about one half cup of milk. Mix it all up and make sure you stir it again right before you dip the bread. Select four slices of bread.
Heat a large skillet to medium. Or use an electric skillet set at 350 degrees. For either method, melt a couple pats of margarine to form a thin coating over the entire bottom of the skillet.
When the margarine is heated, dip the first side of one slice of bread into the stirred egg mixture and turn the bread over to coat the other side. Work quickly with this because the bread absorbs the mixture fast and can begin to fall apart in your hands. Set the slice into your skillet and repeat the same steps for each slice of bread until all the pieces are in the pan.
Use a spatula to lift and check the bottom of each piece as they begin to cook. After they are golden brown flip them over and finish cooking. When making French toast you know it's done when each slice is no longer soft in the middle and nicely browned on each side. Using warmed plates is a great way to serve French toast.
