How to Make Meringue Ghosts: Little meringue ghosts are the cutest little things! These meringue ghosts are the perfect treat for Halloween or any time you are feeling spooky. Kids will love them year round. You can change the shape to a snowman for a winter treat or a swan for a summer treat. You can make any shape that you want! If you want to tint the meringue, simply add a few drops of food coloring while you are beating the meringue mixture. Have fun!

Ingredient list to make meringue ghosts:
6 egg whites
1/2 teaspoon cream of tartar
3/4 cup sugar
1/2 teaspoon almond extract (vanilla is fine if that's all you have on hand)
Mini chocolate morsels for eyes
String licorice for hanging (optional)

Step 1: Preheat oven to 200 degrees.

Step 2: Beat egg whites and cream of tartar at high speed with an electric mixer until foamy.

Step 3: Gradually add sugar, 1 tablespoon at a time, and beat until stiff peaks form and sugar dissolves (about 3 minutes).

Step 4: Add extract (and food coloring if you are tinting the meringue) and beat until blended.

Step 5: Spoon mixture into a plastic food storage bag and snip a small hole in 1 corner (or you can use a pastry bag).

Step 6: Pipe the mixture into ghostly shapes on baking sheets that are lined with parchment paper or wax paper.

Step 7: Add mini morsels for eyes (cut up raisins work well too).

Step 8: Cut licorice into 2 inch pieces, pinch ends together, and insert 1 in top of each ghost for a hanger (only needed if you are going to hang the ghosts).

Step 9: Bake at 200 degrees for 2 hours.

Step 10: Turn the oven off and let meringues stand in closed oven for 8 hours or over night.

Step 11: Remove the ghosts from the parchment paper and store in any airtight container or zip lock bag.
