Pizza Muffins

Topping Ideas: sautéd mushrooms, pepperoni, onions, green pepper, black olives, sausage

  • 1 tube Pillsbury pizza crust
  • 12 oz. shredded mozzarella cheese
  • 2 8-oz. cans tomato sauce
  • 1 Tbs. oregano
  • 1 Tbs. parsley flakes
  • 4 tsp. onion powder
  • 1 tsp. garlic salt
  • 1 tsp. basil flakes
  • salt and pepper
  • 1 Tbs. sriracha sauce

Preheat oven to 400 degrees. In a bowl, prepare pizza sauce by combining tomato sauce cans with all the seasonings and sriracha sauce. Adjust to taste. Set aside. Prepare any desired pizza toppings such as sauteed mushrooms or pepperoni. Set aside.

Roll dough out onto a flat floured surface. Cut 12 circles with a glass and lay into muffin pan, making sure the sides of each muffin hole is covered with dough. Sprinkle mozzarella cheese into center of each muffin. Top with any prepared toppings if desired. Ladle one spoonful of sauce over each muffin. Bake at 400 degrees for 15-20 minutes or until cheese is bubbly and crust is browned.

Easy Super Bowl Tortillas

  • 2 packages of flour tortillas - 10 to 12 inch variety
  • 2 8oz tubs of whipped cream cheese
  • 2 med sized cans of sliced black, drained well
  • 2 bags of shredded cheddar cheese - your choice of mild, medium, sharp or colby jack
  • 1 tsp garlic powder
  • 2 tsp of chili powder
  • salt and pepper to taste

Mix cream cheese, garlic, salt, pepper and chili powder in a bowl. Make sure you have this well blended.

Take a tortilla, place on a large plate and spread thin or slightly thicker layer of cream cheese mixture, sprinkle thin layer of cheese and olives. Roll tortilla and wrap in a piece of plastic wrap, foil or waxed paper. Continue this procedure until all tortillas are stuffed, rolled and wrapped.

Place in the refrigerator for about 3 hours, no longer as they can get soggy. Take from fridge and unwrap one tortilla roll at a time. Cut each tortilla roll into 11/2 inch pieces and skewer each piece with a toothpick.

Place on a plate and cover and refrigerate until ready to serve.

Easy Super Bowl Wasabi Dip

Combine 2 tablespoons wasabi powder and 2 tablespoons water, then set aside 20 minutes. Mash with 8 ounces each cream cheese and ricotta and 3 tablespoons each mirin (rice wine) and rice vinegar.

Easy Super Bowl Tomato Chutney

Toast 1 teaspoon each coriander, fennel and cumin seeds in vegetable oil. Add 2 pounds chopped tomatoes, 2 tablespoons each tomato paste and grated ginger, and a pinch each of curry powder, cayenne, sugar and salt. Sauté until thick. Serve with flatbread.

Easy Super Bowl Horseradish Dip

Mix 1 pound grated cheddar, 1 grated apple and 1/4 cup each mayonnaise, sour cream, horseradish and beer. Add 1 teaspoon each Dijon mustard and Worcestershire sauce. Season with onion and garlic powders.
