And Enjoying a Glass of Wine While Cooking!

I know, we all get sick and tired of working all day and than having to come home and figure out what we're gonna' make for dinner tonight! And we also get sick of cooking the same thing! Well here's one I tried out that gets a "thumbs up" from the family! Take whatever amount of boneless, skinless chicken breast you have, preferably 2 or 3 pieces. Dice them up, season them with salt, pepper, dried basil, garlic and onion powder and brown in olive oil. While chicken is browning, pour yourself a glass of your favorite wine (mine is a good blush!) add diced onion and about 3 cloves of slivered garlic (depending on how much garlic your family can handle!). Don't forget to add a dose of your favorite musician - I always enjoy Marvin Gaye with a light pasta meal!) Add 1/2 cup of olive oil, two tablespoons of butter and cook until lightly browned, stirring frequently.

Add two cups of cooked broccoli (bagged, frozen, steamed broccoli works great!) Combine all ingredients, cook approximately 10 minutes to combine all the flavors together. In the meantime, cook moscatelli rigati according to directions on box. When finished with pasta, drain and add together with chicken combination, stir to spread flavor, warm for about 10 minutes and serve with Parmesan cheese and Italian bread. Voila! You've got a tasty, healthy meal for a family of 4! (or more depending on your servings!)
