Easy Snacks For Holiday Parties: Simple Spinach Roll-ups

I have come up with a great holiday appetizer that not only wows guests, but takes relatively little time and money. I always receive compliments on this dish so it has become my standby for most holiday functions. It is definitely a crowd pleaser! This is the simple version but you can always add ingredients for more flavor or a little kick. I often add jalapenos, tomatoes, minced onion or chopped black olives.

Spinach Roll-ups

2 10 oz packages of chopped spinach

1 8 oz package softened of cream cheese

1/2 cup of sour cream

2 tablespoons of taco seasoning (more or less to taste)

8 oz sharp cheddar cheese

1 pack (8-10) burrito sized tortillas (the red tortillas are great for the holidays)

Cook spinach in a few tablespoons of boiling water and drain. Add cream cheese and cheddar cheese and blend until cheeses are melted. Stir in sour cream and taco seasoning. This is a good time to taste the mixture. You may want to add a bit more seasoning depending on your taste. Spread the mixture evenly on the tortillas, wrap in plastic wrap and refrigerate for at least a few hours. I like to refrigerate these overnight so they are easier to cut but it is not necessary. When ready to serve, slice into 1/2 inch pieces. It's really that easy!

If you are short on time you can turn this into an easy spinach dip by using only 4oz of cheddar for the mixture and using the additional 4oz as a topper. Bake on 350 degrees for 15-20 minutes and serve with bread or crackers.
