St. Patrick's Day Recipes: Crock Pot Corned Beef and Cabbage
Nothing shouts, "Irish!" like corned beef and cabbage; it is the ultimate St. Patrick's Day recipe. This tasty, one-pot meal is super easy to make in the crock pot.
Ingredients:
1 4-lb corned beef with a spice packet
4 medium potatoes cut into chunks
4 medium carrots cut into chunks
1 head of cabbage, shredded
Place 1 cup of water into bottom of crock pot. Add in carrots, potatoes, corned beef, and finally the cabbage. Cook on low for the entire day, approximately 8 hours.
Serve with rye or pumpernickel rolls and grasshopper pie (recipe for pie below).
St. Patrick's Day Recipes: Rueben Sandwiches
If you'd prefer to have Rueben sandwiches instead of corned beef served with potatoes, cabbage, etc., then cook corned beef (with the spice packet), together with a cup of water in the crock pot all day. Or you can serve the corned beef with cabbage, potatoes and carrots one day and then used leftover corned beef on another day to make Rueben sandwiches. Either way, here's what you'll need to make 4 Reuben sandwiches:
Ingredients:
2 cups thinly sliced cooked corned beef
1 small can of sauerkraut, drained
4 slices Swiss cheese
Thousand Island dressing
8 slices pumpernickel or rye bread
Cooking spray such as Pam
Spread bread with Thousand Island dressing. Top each of 4 slices of bread with ½ cup of corned beef, ¼ of a can of sauerkraut, a slice of Swiss cheese, and remaining slices of bread.
Spray a non-stick skilled with Pam, and heat on medium. Grill the sandwiches till golden brown on each side. Serve with mint and chip shakes (recipe below).
Green St. Patrick's Day Recipes
St. Patrick's Days isn't complete without some type of green food. Unfortunately, many food items that are not naturally green look disgusting when colored green, so I shy away from most artificially colored green foods.
But if you want to make something that isn't naturally green for your St. Patrick's Day meal that won't look disgusting, why not make mint and chip shakes or grasshopper pie? The green St. Patrick's Day recipes below are easy to make and delicious!
St. Patrick's Day Recipes: Mint and Chip Shakes
Ingredients:
2 pints mint and chip ice cream
¾ cup milk
Blend ice-cream and milk together in a blender until smooth. Serve at once.
St. Patrick's Day Recipes: Grasshopper Pie
Ingredients:
1 9-inch chocolate pie crust
8 oz cream cheese, softenend
1 cup milk
2 tablespoons green crème de menthe liqueur
2 tablespoons white crème de menthe liqueur
1 teaspoon vanilla
1 4 oz container Cool Whip
Using a mixer, blend together cream cheese, milk, liqueur, and vanilla. When well blended, fold in Cool Whip.
Chill for 30 minutes in the fridge, then spoon into the pie crust. Cover and freeze, for at least 4 hours.
