Easy Strawberry Nut Bread Recipe for Mother's Day

Here's a delicious, easy and quick nut bread to whip up for Mother's Day or any time. Just 10 minutes to prepare and bake for 1 hour. The house will be filled with warm and delicious scents of cinnamon to entice anyone's taste buds.

The bread is spiced with cinnamon and enriched with your favorite nuts. Frozen strawberries are used to make this bread, so it can be made and enjoyed anytime of the year. The bread is best if it is chilled before slicing, and great with butter or cream cheese slathered on each slice.

INGREDIENTS:

2 (10 ounce) packages of frozen, sliced strawberries

4 eggs

1 cup cooking oil

1 cup sugar

3 cups all-purpose flour

1 tablespoon cinnamon (or a bit more to your liking)

1 teaspoon baking soda

1 teaspoon salt

1 ¼ cups of chopped nuts (walnuts, cashews or whatever you like)

  1. Defrost the strawberries.
  2. Beat the eggs in a bowl until fluffy. Add cooking oil, sugar and defrosted strawberries.
  3. Sift the flour, cinnamon, baking soda, and salt into a mixing bowl. Add the strawberry mixture and mix until well blended. Stir in nuts. Pour the batter into 2 greased and floured 9 ½ x 5 x 3 or 8 ½ x 4 ½ x 2 ½ inch loaf pans.
  4. Bake in a 350 degree F. oven for 1 hour and 10 minutes - or until done. Cool in the pans for 10 minutes, then turn out and cool on a rack.
Yield: 2 loaves or 8-10 servings
