Ingredients:
(2) Tbsp. olive oil
(1) small onion (diced)
(2) cloves garlic (crushed)
(1) pound ground beef (can be a little less)
(2) 8 oz. can tomato sauce (or equivalent tomato paste and water)
(3) cups rice (cooked) - I use two cups uncooked rice with 2 cups water
(2) large green bell peppers
(1) large glass loaf pan
(1/4) cup ketchup
Directions:
Preheat oven to 350 degrees and prepare peppers by washing them, then cutting the center stem out to leave a wide enough opening to fill peppers. Clean seeds out of the inside and place in non-stick coated glass loaf pan, opening up.
Add olive oil to a deep sauce pan or frying pan and heat with medium for just a minute or two. Add in garlic and onion and reduce heat to medium-low until onions are transparent. Add ground beef and cook until just all of it is brown (don't overcook since this will be going into the oven as well.) If your pan is big enough, you can use that, if not use a big bowl to mix ground beef mixture (do not drain), cooked rice, and tomato sauce. Mix thoroughly.
Stuff peppers with as much ground beef and rice mixture as you can. Fill the edges of the loaf pan with any remaining mixture. Cover with aluminum foil and bake for 30 minutes. Then remove foil, drizzle the tops of the stuffed peppers with the ketchup. Leave uncovered and bake another 30 minutes or until peppers are soft.
Let cool for 10-15 minutes, then plate and EAT!
