Easy Supper Casserole Dishes

The best thing about preparing casseroles is that you can mix all the ingredients together, and let supper bake while you take a few minutes to relax or squeeze in a little family time! All you need to do to finish off supper is to add a side salad, some hot rolls or bread, and fruit for dessert. These casseroles are easy and economical dishes for potluck suppers, too.

Cavatini
2# ground beef
1# ground sausage
1 large onion, chopped
1 green pepper, chopped
1 small can mushrooms
18 oz various shaped pasta
1 large jar Ragu or your favorite spaghetti sauce
2 pkgs sliced pepperoni
1 12 oz pkg shredded mozzarella cheese

Brown the beef, sausage, green pepper, mushrooms and onions together in a large skillet, and drain off grease. Add spaghetti sauce and pepperoni slices to the mixture, heat through and stir well. Boil the pasta until just slightly underdone, then drain and add to the mixture. Place the mixture in a large casserole dish and top with the shredded mozzarella. Bake at 350 degrees for about 30 minutes, or until the casserole is bubbly and the cheese is melted.

Taco Rice
1# ground beef
1 onion, diced
3/4 cup rice
1 can diced tomatoes
1 pkg taco seasoning mix
2 cups water
2 cups shredded cheddar cheese

Brown ground beef and onion, drain off grease. Add the taco seasoning mix, water, rice, and tomatoes. Cook over medium heat until the mixture begins to dry, then put in a baking dish. Sprinkle cheese over the top and bake at 350 degrees F for 30 minutes.

Cowboy Bean Casserole
1# ground beef
2 large cans pork and beans
1 large can kidney beans
1 pkg dry onion soup mix
1/4 cup vinegar
1-1/4 cup brown sugar
1 cup catsup
2 Tbs mustard
1/4 cup water

Brown the ground beef, and drain. Mix all ingredients together and pour into a large casserole dish. Bake for 1 hour at 325 degrees.

    Plus, I didn't have canned tomatoes but I did have tomato sauce. I think the tomatoes would have been better but no one was complaining :)

    I came back to note that the dinner the other night was saved because of this article. I was bone tired and we had the ingredients to make the Taco Rice. It was truly yummy. One son loves rice and this was a change of pace for us. Thank you!

    Thank you! School is canceled. We have wind chills of 30-below. I am SO making taco casserole with my kids today. We even have all of the ingredients! Brr! Sounds so good! ;-)

    Oh, do I need this one today. We had amazing winds come through, wind dropped something like 30 degrees and we went from balmy to tornado warnings and then freezing cold. Not much sleep. Seeing this was indeed a blessing today, something easy for dinner. Thank you!
