Easy Sweet Potato Casserole

Quick and easy Sweet Potato Casserole that is a hit with the whole family. Only takes 20 minutes to prepare, then pop in the oven for another 30 minutes and your done!

Ingredients

Serves 12
4 Cups Sweet Potato
1/2 Cup Sugar
4 Tbsps Butter
1/2 Cup Buttermilk
2 Eggs
1/2 Tsp Salt
1/2 Tsp Vanilla Extract
1/2 Cup Brown Sugar
2 Eggs
3 Tbsps Butter
1/3 Cup Flour
1 package Mini Marshmallows

Directions for Easy Sweet Potato Casserole

Preheat Oven
Preheat Oven to 325 degrees.

Prepare Potatoes
Peel 3 large sweet potatoes and cut into 1/2 inch cubes. Put cubes into a 4 Qt saucepan and heat on medium until the potatoes are tender. Drain and mash.

Combine Base Layer Casserole Ingredients
In a large bowl, mix together the sweet potatoes, sugar, eggs, softened butter, buttermilk, 2 eggs, salt and vanilla extract. Mix until smooth. Fold ingredients into a 9x13 inch baking dish.

Prepare Brown Sugar Top Layer
In a medium bowl, mix the brown sugar, 2 eggs, softened butter and flour. Spread the mixture over the sweet potato layer, and sprinkle generously with marshmallows.

Cook
Bake in oven approximately 30 minutes or until marshmallows become golden brown.
Tip
Serve warm.
