3 lbs. 3 Sweet Potatoes
4 oz. Butter
6 oz. Brown Sugar
1 tsp. Salt and Pepper to taste

Boil, Cool and Peel the Sweet Potatoes
Grab a couple good sized sweet potatoes and boil them in water with the skin on for about 20 to 30 minutes. Boil the sweet potatoes until they are tender. Remove them from the boiling water when you can poke through them to the center with a chopstick or a fork.

Let the sweet potatoes cool to room temperature. Do not put them in the refrigerator to quicken the cooling process, or they will turn gummy.

Peel the skin off of the sweet potatoes once they have cooled off to room temperature.

Slice, Glaze, and Season the Sweet Potatoes
Slice the sweet potatoes into half inch pieces and lay them out flat in a 13 x 9 inch baking dish. You can use a similar sized dish if you do not have one of the exact dimension

Top each piece of sweet potato with a dab of butter and one teaspoon of brown sugar.

Sprinkle the prepared sweet potatoes with salt and pepper to taste.

Bake the Sweet Potatoes
Place the baking dish of sweet potatoes in the oven and cook at 375 degree for about 30 minutes.
