Easy Toffee Bars for Your Christmas Cookie Tray

English Toffee Bars

I have included these easy to make candy like treats on Christmas cookie trays for so many years that I have forgotten where the recipe came from. I know that I recopied it about ten years ago because it was getting hard to decipher the amounts of the ingredients because of use. It really does seem like toffee and no one will know about the crackers unless you tell them.

Ingredients:
24 square saltines with unsalted tops
1 cup butter
1 cup packed brown sugar
½ teaspoon vanilla
6 oz chocolate chips

Preheat the oven to 375. Grease a 13x9 inch pan. Arrange saltines in single layer.
Melt butter and sugar over medium heat in medium saucepan. Boil 3 minutes, stirring once or twice. (Adjust burner heat down gradually, so it maintains a gentle boil) Stir once or twice to be sure it doesn't stick on the bottom. Remove from heat. Stir in vanilla and pour over crackers, spreading evenly. (If crackers shift, rearrange with fork)
Bake 5 minutes. Cool in pan on a rack 10 minutes or until top is just set. Sprinkle with chocolate chips. Let stand 5 minutes until chips become shiny and soft. Then spread evenly over the top.
Cool and cut in 1 x 2 inch bars. Store in a covered container in the refrigerator.
