Easy Vegan Dessert - Apple & Nut Pie

You Don't Have to Be Vegan to Love This One!

Makes: 8 servings
Prep: 10 minutes
Bake: at 450 degree F for 11 minutes, then at 350 degree F for 1 hour

Ingredients

1 refrigerated ready-rolled piecrust (from a 2-crust, 15-ounce package)
1-1/4 cups packed light-brown sugar
1 cup all-purpose flour
1/2 cup (1 stick) unsalted butter, softened
1/2 cup chopped walnuts
3 Granny Smith apples (about 1-1/2 pounds), peeled, cored and thinly sliced
Vanilla ice cream (optional)

Directions

1. Heat oven to 450°F. Fit piecrust into a 9-inch pie plate. Prick with a fork and crimp edges. Bake at 450°F for about 11 minutes or until golden brown. Cool completely.

2. In a large bowl, beat 1 cup of the brown sugar and the flour, butter and walnuts together until crumbly; set aside.

3. Arrange half of the apple slices in crust. Sprinkle remaining 1/4 cup of sugar on top. Add remaining apple slices and top with crumb mixture.

4. Reduce oven heat to 350°F and bake pie for 1 hour or until browned. Serve with vanilla ice cream, if desired.

    It wouldn't seem that hard to make most pies vegan! It would seem the main thing is to be sure the crust is not made with lard!
