Easy Ways to Add Vegetables to a Healthy Breakfast

When you actually eat all of the recommended vegetable servings every day (plus your fruits, proteins, grains and "good fats") it is unlikely that you will actually have any room for junk food.

One way to help ensure that you are eating the right amount of vegetables recommended for your age, weight, and gender is to add vegetables to you breakfast.
Breakfast foods are very versatile, and can accommodate many of your favorite vegetables. If you tend to be a late riser, and eat breakfast after 10, and consider breakfast brunch, you can eat even more vegetables and not feel silly about it.

You can eat sensible healthy breakfast, and add some vegetables. These breakfast ideas with vegetables do not take that much extra preparation. If preparation time is an issue, take five or 10 minutes the night before and cut up some veggies for breakfast for the next day.

Easy Ways to Add Vegetables to a Healthy Breakfast

1. Scrambled Egg Whites with Cheese and Salsa

When I make scrambled eggs I tend to use one whole egg, and one egg white. I have experimented with eating just egg whites, but the consistency is not always right. I leave in one whole egg for flavor, and then add an extra egg white, for an added boost of protein.

It takes very little time to scramble an egg, less time than you will spend sitting in line at your local coffee shop drive through.

If you like ketchup on your eggs, try adding salsa instead. Salsa is a fat-free and more natural tomato-based condiment that goes well with eggs. It also has added vegetables.

2. Egg Omelette with Spinach and Mushrooms

Spinach can be washed and dried and mushrooms can be rubbed clean (do not wash or they will be too watery) in minutes. Add to a whole egg or egg white omelette.

3. Zucchini Pumpkin Muffins

If you tend towards baked goods in the morning, make up a batch of zucchini muffins. Find a low-fat pumpkin bread or zucchini bread recipe and pour the batter into muffin tins. You will have a muffin gives you vegetable boost. The pumpkin will add a nice moisture and flavor.

4. Carrot Bran Muffins

A bran muffin mix from the store can benefit from some finely shredded or diced carrots. You will be fueling your body with fiber and a healthy vegetable.

5. Make a Vitamin-Rich Veggie Smoothie

Use your blender or food processor to experiment with vegetable smoothies. Use a water base, or start with a pre-made low-sodium vegetable drink and add your own vegetables and spices.
