Egg Cup Surprise for Mother's Day Brunch!

Unique and fun way of making scrambled eggs. Surprise Mom when you fill cupcake papers with eggs and your choice of meat. Bake in the oven and unwrap a cute little scrambled egg surprise! Adding peppers, onions and spices to personal taste.

Ingredients

Serves 4
7 eggs
1/2 green pepper
1/2 onion
2 per cup little smokies
sprinkle shredded cheddar cheese
6 tbls. milk
optional salt
optional pepper

Directions for Egg Cup Surprise for Mother's Day Brunch!

Preheat oven to 350 degrees

Saute onions and peppers until soft.

Add milk to eggs and stir thoroughly. Add salt, pepper and any spices you use on your egg dishes. Add sauteed onions and peppers to this mixture, stir well.

Put cupcake papers in cupcake pan. Place 2 little smokie sausages in each cupcake paper. If you use ham, cube it. If you use bacon, crumble it.

Finish filling cups with egg mixture. Bake for at least 20 minutes. Take out 3-5 minutes before they are done and sprinkle cheddar cheese on top. Finish baking.
Tip
Use fully precooked meat. Use a toothpick to see if egg cups are done.
