Ingredients required.

1 medium or large egg

100ml water

1 tablespoon of olive or vegetable oil

1 cup long grain white rice

Garden Peas as required.

First beat the egg and the water together in a small bowl or jug. Add a pich of salt if required. Pour a little of the oil onto a 7inch frying pan. Heat the pan gently until the oil begins to smoke. Add the egg mixture to the pan making sure the whole of the base of the pan is covered. Gently keep the pan heated until the egg starts to set. As soon as the egg has set nicely you can turn the omelette over using a spatula and cook a few minutes on the other side. When cooked, empty onto a plate and cover. Leave to one side while the rice is cooked.

Take your rice and rinse it out thoroughly under a running tap so as to eliminate most of the gluten. Strain the rice through a colonder so as to eliminate the glutenous water. Add the rice to a pan of boiling water and continue to simmer till the rice is part cooked. This should take roughly 10 to 12 minutes.Remove the pan from the heat once it is cooked so as it is not hard to the bite.Strain the rice and add the rest of the oil to a frying pan or wok. Quickly heat the pan to a high heat and continue stirring the rice. This should only take about 2 to 3 minutes at most. Slice up the omelette you prepared earlier and add to the frying pan with the rice. Continue to stir the rice and the egg mixture. Finally add pre prepared garden peas to the mix and you are ready to serve.

Egg fried rice makes a delightful side dish for many other meals or can be eaten as a snack on its own. You can add soya sauce to your own taste if you prefer. Cooking egg fried rice like this ensures a tasty and healthy alternative to the commonly served Singapore fried rice we are more often served with.
