Egg Pancake Crepes Recipe: Our Traditional German Christmas Breakfast

Our Christmas Breakfast Table Includes a Dozen Colorful Egg Pancake Crepe Fillings and Toppings

Families are looking for ways to trim their holiday spending this year. We made a family cookbook full of all of our favorite recipes that we can hand down to our children and grandchildren for their Christmas presents. I still have all my favorite family recipes written in my Grandma's and Mother's handwriting that I will cherish forever.

In all of my years growing up, our traditional German Christmas breakfast was Egg Pancakes and our choice of at least a dozen toppings and crepe pancake stuffers to enjoy. Just a hint about portions: each person in our family could easily consume 3-4 egg pancakes on Christmas morning. Here is the recipe for our Egg Pancakes for you to enjoy on Christmas morning.

Egg Pancake Crepe Recipe

(makes six 10" pancakes)

2 jumbo eggs

¾ cup milk

½ tsp salt

½ cup sugar

Combine all the ingredients in a large bowl and mix well.

Add 1 ¾ cups all-purpose flour and beat until smooth.

Slowly add an additional 2 cups milk while beating batter into a liquid form.

Heat a 10" skillet on medium heat with a pad of butter.

Pour about ½ cup liquid egg pancake batter into skillet and swirl around until batter fills the skillet.

When the egg pancake is lightly brown, add a pad of butter to the top and flip it over using a long spatula.

When the pancake is done, you can layer them in between two dinner plates and keep warm in the oven.

To eat, cover the egg pancake with your favorite filling and roll into a tube like a crepe.

Maple Syrup

Maple Syrup with Chopped Pecans

Fruit Syrup

Chocolate Syrup

Fruit Pie Fillings

Honey

Cinnamon and Sugar Mixture

White Sugar

Cream Cheese

Whipped Cream

Fresh Berries

Fruit Jams, Jellies, Preserves

    What a lovely idea. I am bookmarking it in the hopes I will get organized enough to use it this year. I have started cookbooks for my kids out of mini photo albums and encourage them to add new, favorite recipes as we come across them.
