Egg-Free Easter Cookies

White Chip Banana Macadamia Nut

Save your eggs for the Easter Bunny this Easter...

1 cup butter
2 mashed bananas
2 cups sugar
4 homemade unflavored whole-wheat bread crumbs or 3 cups rolled oats
2 tsp. baking soda
3 tsp. cinnamon
3 1/2 cups flour
2 cups white chocolate chips
1/2 cup chopped macadamia nuts

Pre-heat oven to 350 degrees. Heat banana and butter in the microwave until the butter is soft. Add sugar and mix until blended. (Or use a food processor.) Add the bread crumbs (or oats) and stir well. Then add all dry ingredients. Finally, add the white chocolate chips and macadamia nuts. Use your hand (more uniform shape) to drop balls of dough on an ungreased cookie sheet. Bake 10 minutes or until golden brown.

The white chips really stick out against the wheat dough. I like to make over-sized, jumbo cookies. Since there are no eggs the cookies will not come out flat, instead they are more round and beautiful. Enjoy!

Makes 3 dozen.

    I must have misread this...I thought you said we had to put the Easter Bunny in our cookies. Chewy!
