Elvis Cake Recipe

A Recipe Created by My Mother

In the normal way of things you would expect me to be the Elvis fan and my mother the Ed Ames fan. Since our family has always listened to a different drum beat it was the other way around. I loved Ed Ames and my mother was the Elvis fan.

In the late fifties she created this cake in honor of her favorite singer.

Elvis Cake

Preheat oven to 350º

Prepare two 9 inch cake pans by greasing and sugaring. Yes, I do mean use sugar instead of flour. This will create a nice glaze and there will be less chance of the layers sticking to the pan.

2 cups flour Mom always used all purpose flour.
2 teaspoons baking powder
½ teaspoon salt
½ cup butter
1 cup sugar
3 large eggs
2 teaspoons vanilla
3 large or four small bananas roughly mashed. Be sure to leave some chunks of bananas.
½ cup milk (you may need more than this but add carefully a tablespoon at a time)

Preparation:

Sift the dry ingredients and set aside.

In a large mixing bowl cream butter and sugar until fluffy. Add eggs one at a time. Drizzle in the vanilla until completely mixed with sugar and butter. Add mashed bananas by folding in with spatula.
Add flour a bit at a time so that it doesn't fly all over your kitchen. Add milk anytime the batter seems to be getting too dry.

Pour batter into cake pans and bake for 25 minutes or until done. You can either use a tooth pick to test for doneness or you can touch the middle of the cake lightly. When it springs back it is done.

Cool a few minutes in pan to let it set then turn out onto a rack. Allow to completely before frosting.

Elvis Cake Frosting

If you are up on your Elvis trivia you know the frosting is going to be peanut butter flavored.

Peanut Butter Frosting

3 cups confectioners sugar
1 teaspoon vanilla
¼ + cup of peanut butter

Mix vanilla and peanut butter

Add confectioners sugar one cup at a time until you have a frosting similar to butter cream frosting.

Use strawberry jam as filling between the layers
Frost the sides first and then the top
Cake is ready to serve.
