Fabulous Soup

This soup is kind of like the white soup at Olive Garden just BETTER! It's also the easiest thing I've ever cooked!

What you'll need:

5-6 potatoes small to medium sized
1 white onion (you'll only use half)
6 chicken bouillon cubes (large)
Kale (in veggie section, or u can use collard greens)
5-6 slices pre-cooked
1 lb spicy pork sausage
3-4 cloves garlic
1-pint heavy cream
10 cups water

What To Do:

In a big pot start to boil 10 cups of water and the 6 bouillon cubes. Set the heat to medium high. Wash the potatoes with skin on and slice them about a ½ inch thick. You want them to still hold their shape while cooking, it's not good if they get mushy. Add potatoes to the pot of water. Then cook the sausage in a pan until completely done. Drain and add to soup. To get rid of some of the grease from the sausage you can rinse it under cold water and then add to the soup. Dice half the onion and cut the slices of bacon into bite size pieces. Add both onion and bacon to the soup. Mince garlic cloves and add. Lower heat and let simmer until you can stick a knife easily into the potatoes. Which should be about 15-20 minutes. Then add the heavy cream. Rip the kale up into bite size pieces and add into the pot, then turn off the heat. Make sure to stir at this point if you haven't already. Let it sit for 15-20 minutes to let all of the flavors mix. You can add salt or pepper if you need to. I make this every Sunday and then eat it for lunch at work through out the week. It's delicious and very filling! For dinner you can add some garlic bread and it goes great with wine!

    I've never had this soup at Olive Garden but it sounds delicious! I'll have to try it at home! Thanks for the recipe!
